For a tasty dip, sandwich spread or burrito filling, keep cooking the beans another few hours until they soften enough to form a paste when stirred. Add onion flakes and chipotle powder or cayenne pepper for an extra kick. Top with lettuce & tomato for an out-of-this world sandwich that also happens to be low-fat, high protein and high fiber!

Basic Magic Bean Soup Ingredients
1 pound Great Northern Beans
1 teaspoon salt
1 tablespoon oil
1/2 gallon water
1) Put beans in colander and rinse thoroughly. (Remove any stones or other impurities.)
2) Add beans, salt, oil and water to crockpot.
3) Turn crockpot on high and about 8-10 hours later you have soup!
Stir occasionally and add water as needed based on how much water evaporates from your crockpot. Pots with loose-fitting lids lose more water. Adjust salt to taste.
Note: Soaking beans overnight before cooking can reduce cooking time and increase the availability of certain nutrients.
The soup is delicious all year, but to dress it up with the tastes of the harvest, in the last hour of cooking, add sweet corn kernels, diced tomatoes, and chopped bell peppers. Diced ham or bacon also adds extra flavor. Top it off with a handful of blue corn chips if desired. Wonderful hot or chilled!
